Galette
The galette des rois is a French staple at Christmas, it’s traditional to hide a figurine inside!

Preparation time - less than 30 minutes 
Cooking time - 30 minutes to one hour 
Makes 1 large tart 

Ingredients
750g ready-made all-butter puff pastry, chilled
Plain flour, for dusting
1 free-range egg, beaten, to glaze

Tell us how you’ll be spending Christmas this year…
It will be a traditional Christmas for us at home with the family – good food and lots of laughter. It’s so lovely to have everyone together, especially the grandchildren, and everyone helps out. I’m a bit of a Mother Hen at this time of year.

With a Christmas tree and all the decorations?
My son is a tree surgeon and always gets me a lovely tree. I like to put it up early, as I can’t wait for Christmas. We dress it with decorations that have been in the family for years.

Do you prepare in advance?
Yes, always. It’s the only way, otherwise it can be really daunting. Make life easier for yourself. Once you’ve made your bread sauce, freeze it. Prepare the brandy butter and keep it in the fridge. On Christmas Eve, make the stuffing, and I usually parboil and half-roast the potatoes and parsnips too. Trim your brussels sprouts, but don’t keep them in water.

Any special twists?
I mostly cook very traditional food, but each year I always like to introduce
a modern twist with new flavours. Always keep handy jars of roasted peppers, cans of chickpeas, tubs of houmous – anything that brings flavour and saves time.

What is your idea of a traditional Christmas dinner?
It has to be turkey with all the trimmings, including a sausage stuffing and optional veg stuffing, bread sauce and gravy. I also try to include a vegetarian option – something like my aubergine five nut roast with tomato sauce.

Store-cupboard staples?
I always have things like olive oil, spices, herbs, tomato passata, dried apricots, chestnuts and mixed nuts available.

Any top tips?
Make sure if you’re buying a larger turkey than usual that it will fit in the oven. Don’t let everyone in the kitchen as you’re preparing, you need some time to yourself to focus. And put the champagne in the fridge the night before, so it’s chilled for a pre-lunch drink!

What’s on your Christmas wish list this year?
For me, Christmas is about family, not presents or anything material. It’s good for the soul just spending time cherishing your loved ones.

What's your favourite Christmas dessert?
I usually make a few. I’d have to include chocolate yule log, as it’s my husband’s favourite. It’s easy to make and the children love it. I make Christmas pudding at the end of November, and I know the kids would be disappointed if
I didn’t make a traditional trifle.

You’re presenting another Bake Off Christmas Masterclass with Paul Hollywood this year. What’s on the menu?
White chocolate cheesecake with ginger. It’s delicious and moreish, and the family love the stem ginger as it gives a lovely Christmassy fragrance. It’s quite decadent, but a real treat during the festive season, and good for people who don’t like the traditional pudding.

We’re also doing a galette – puff pastry with frangipane in the middle. It’s fairly simple to make and you can use ready-made puff pastry. Then there’s a Genoa cake, which is a light alternative to the traditional Christmas cake. It’s a wonderfully fruity, not too dense and uses pineapple and cherries. I think I’ve been making this for the family at Christmas for over 15 years.

Mary Berry’s White Chocolate Cheesecake.

Ingredients
50 g butter
25 g dark chocolate
300 g white chocolate,
broken into pieces
400 g full fat cream cheese
150 ml soured cream
2 eggs
1 tsp vanilla extract
Dusting of cocoa powder
About 225g fresh strawberries or raspberries

Method
1. Pre-heat oven to 160°C/gas mark 3.
2. Grease and line the base of a 20 centimetre
deep spring form cake tin with non-stick paper.
Melt butter and chocolate in small saucepan
over a low heat. Stir in crushed biscuits and
press evenly over the base of the tin chill in the
fridge.
3. Break the white chocolate into a bowl and
melt very gently over a pan of hot water (do not
allow the chocolate to become too hot), stir
occasionally with a spoon until runny and
smooth.
4. Whisk the cream cheese and eggs together in
a large bowl until smooth, add soured cream and
vanilla and whisk again until completely smooth
with no lumps. Stir in the melted chocolate and
mix together.
5. Pour in the tin and spread evenly over the chilled base. Bake in preheated oven for about 45 minutes until firm around the edge and just set in the middle. Remove from the oven. Using a small palette knife run the knife around the edge of the tin and then allow to cool and chill. Remove the outside ring and lift base onto serving plate.
Serve dusted with cocoa powder and with a few fresh strawberries or raspberries.

Lemon and lime cheesecake.

Of all the desserts in my new book, this lemon and lime cheesecake is one of the simplest to make. You must use full-fat condensed milk and cream cheese for the recipe to work, as the filling won’t set if you use low-fat substitutes.
Serves 4-6
- 10 digestive biscuits, crushed
- 50g (1¾ oz) butter, melted
- 25g (scant 1oz) demerara sugar
- 150ml (5fl oz) double cream
- 397g can full-fat condensed milk
- 175g (6oz) full-fat cream cheese (room temperature)
- grated zest and juice of 2 large lemons
- grated zest and juice of 1½ limes
- 150ml (5fl oz) double or whipping cream, to decorate
- ½ lime, thinly sliced, to decorate
1. First, make the crust: place the crushed biscuits, see the tips below, together
2.with the butter and sugar, in a medium
3.bowl and stir until the ingredients are thoroughly mixed.
4.Turn the crust mixture out into a 20cm (8in) loose-bottomed tart tin and press firmly and evenly over the bottom and up the sides using the back of a metal spoon. Chill for 30 minutes until set.
5.Make the filling: place the double cream, condensed milk and cream cheese in a bowl with the lemon and lime zests. Mix thoroughly. Using a balloon whisk, gradually whisk in the lemon and lime juices and continue whisking until the mixture thickens.
6.Pour the lemon and lime filling into the crumb crust and spread it evenly. Cover and chill overnight.
7.Up to 6 hours before serving, whip the cream until it just holds its shape, as in the  tips below. Decorate the top of the cheesecake with swirls of whipped cream and slices of lime, then return to the fridge.

The Mary Way: Crush The Biscuits
Place the biscuits in a clear plastic bag.
Lay the bag on a flat surface and run a rolling pin back and forth over the biscuits until they form crumbs.


Whip The Cream
Put chilled cream into a chilled bowl and start whipping slowly until the cream begins to thicken. (If using an electric mixer, use the lowest speed.)
Once the cream has thickened, start whipping a little faster.
Lift the whisk to see if the cream retains its shape.
If not, continue for a little longer.

Korean Beef + Toasted Sesame Rice.

30 Minute Korean Beef + Toasted Sesame Rice - Half Baked Harvest:
Toasted Sesame rice - version 2!
1 cup uncooked jasmine rice
2 cups water
1 tablespoon toasted sesame oil
1/4 cup toasted sesame seeds
4 scallions or green onions, sliced

Instructions

To make the rice.
Heat the sesame seeds in a small skillet over medium heat, shaking the pan occasionally for about 5 minutes.
Remove the seeds when they darken and become fragrant.
Add the water to a medium size pot. Bring to a low boil and then add the rice and sesame oil.
Stir to combine and then place the lid on the pot and turn the heat down to the lowest setting possible.
Allow the rice to cook ten minutes on low and then turn the heat off completely and let the rice sit on the stove, covered for another 20 minutes (don't take any peeks inside!).
After 20 minutes remove the lid and fluff the rice with a fork and stir in 1-2 tablespoons toasted sesame seeds.
Note that rice can cook differently for everyone, this is just what works for me.

While the rice cooks start the steak.
Slice the flank steak against the grain into 1/4-inch pieces and add to a medium size bowl.
To the bowl add the 1 tablespoon of cornstarch and toss well. Set aside.
Mix the remaining cornstarch with 2 tablespoons cold water until there are no lumps.
Heat 1 tablespoon of peanut oil in a small sauce pot over medium-low heat.
Add the ginger and garlic and sauté about 1 minute.
Add the soy sauce, water, hot chili oil, brown sugar, and crushed red pepper.
Whisk to combine.
Bring the sauce to a boil and whisk in the cornstarch mixture, boil for about 3 minutes.
Remove from the heat and set aside.
Heat a large skillet or wok over medium high heat, add 1 tablespoon of oil.
Once hot add the red pepper, orange pepper and zucchini.
Stir fry for about 5 minutes or until the veggies are soft and tender, then remove from the pan and place on a plate.
Return the skillet to medium high heat and add another tablespoon of oil.
Grab the steak and add to the skillet, shaking off any extra cornstarch as you place it in the pan.
Stir fry for about 2-3 minutes, until just barely cooked through.
Now carefully pour the sauce into the skillet.
Add the peppers back in and bring the sauce to a boil.
Boil 3-4 minutes or until the sauce has thickened and is coating the steak and peppers (the sauce must come to a boil for it to thicken).
Stir in the green onions and serve over the toasted sesame rice, sprinkle with toasted sesame seeds if desired.

Asian Chili Pork, Ginger and Tangerine Stir Fry

30 Minute Sweet Asian Chili Pork, Ginger and Tangerine Stir Fry - Half Baked Harvest:
Ingredients
2 tablespoons sesame oil
1 (500 gramm) pork tenderloin, sliced thin or pack of pork stir fry
1 tablespoons fresh ginger, minced or grated (use more ginger if you would like!)
1 red bell peppers, sliced thin
1 cups sweet thai chile sauce
1/8 cup soy sauce
1/8 teaspoon ground cloves
1/4 teaspoon cinnamon
1/8 teaspoon pepper
1 bunches bok choy, chopped
1 tangerines peeled and in wedges

scallions or green onions, thinly sliced, for garnish

Toasted Sesame Rice for garnish
1 cup uncooked jasmine rice
2 cups water
1 tablespoon toasted sesame oil
1/4 cup toasted sesame seeds

3. While the rice cooks make the stir fry.
Heat a very large skillet over high heat and add the sesame oil.
When the skillet is hot, but not smoking (if it starts to smoke, turn heat down a bit and wait 5 minutes before adding the pork) add the pork in a single layer (you may need to do this in 2 batches if your skillet is smaller) and allow it to cook for 2-3 minutes, so it can get a nice caramelisation on it.
Then toss it around and cook another 2-3 minutes, or until the pork is browned an just getting crispy on the edges.
Remove the pork from skillet and set aside.

4. If needed add another tablespoon of sesame oil to the skillet and throw in the red peppers.
Stir fry the peppers for 3-5 minutes, until they just begin to soften.
Add the pork back to the skillet along with the ginger and stir fry 30 seconds.
Add the sweet thai chile sauce,
- soy sauce,
- ground cloves,
- cinnamon and
- pepper.
Allow the mixture to bubble and reduce, about 5 minutes, or until the sauce has thickened and coats the pork nicely.
When the sauce is to your liking add the bok choy and toss well, cooking for another minute.
Remove from the heat and stir in the tangerines.

5. Serve the stir fry over the rice and garnish with green onions and toasted sesame seeds.

How to leach vegetables.

For Potatoes, Sweet Potatoes, Carrots, Beets, Winter Squash, and Rutabagas:

  1. Peel and place the vegetable in cold water so they won’t darken.
  2. Slice vegetable 1/8 inch thick.
  3. Rinse in warm water for a few seconds.
  4. Soak for a minimum of two hours in warm water. Use ten times the amount of water to the amount of vegetables. If soaking longer, change the water every four hours.
  5. Rinse under warm water again for a few seconds.
  6. Cook vegetable with five times the amount of water to the amount of vegetable.

Rice pudding. (different!)

Ingredients (serves 3-4)

130g short-grain rice

450ml full-cream milk
150ml double cream

200ml evaporated milk

20ml-30ml water, optional
50g golden caster sugar
6 cardamom pods, gently crushed
1 cinnamon stick

2 cloves
zest of half an orange
1tsp mixed spice
20g flame raisins
30g unsalted butter

To garnish:

3tbsp flaked almonds

dried, edible rose petals (optional)
Method

- Step 1: Pour the full-cream milk into a saucepan then add the cinnamon stick, cloves and cardamom. Bring to a simmer over a medium heat. Allow to bubble for a few minutes. Remove from the heat and cool. Ideally, allow the flavours to infuse overnight in the fridge.
- Step 2: Toast the flaked almonds in a pan over a low heat until golden. It’ll take about 2min. Set aside.
- Step 3: To make your pud, combine the rice with the infused milk, evaporated milk, orange zest, sugar and cream in a saucepan. Bring to a simmer over a medium heat. Cook gently for about 35min, stirring quite frequently and tasting – the rice should have a little bite but not much. If the pudding seems too thick, add a little water, tablespoon by tablespoon, until you are happy with the consistency. Remove the spices.
- Step 4: To punctuate the sweetness, stir in the mixed spice and raisins, then beat in the butter.
- Step 5: Serve garnished with the toasted almonds and rose petals, à la Yotam Ottolenghi."

Horseradish and mustard beef casserole.

Ingredients
3 tbsp sunflower oil
1.5kg braising steak, diced
3 large onions, roughly chopped
6 garlic cloves, crushed or finely chopped
300ml beef stock
50g plain flour
300ml dry white wine
3 tbsp Worcestershire sauce
1 tbsp light muscovado sugar
salt and freshly ground black pepper
500g chestnut mushrooms, halved
3 tbsp Dijon mustard
3 tbsp creamed horseradish sauce
3-4 tbsp double cream (optional)
Preparation method
1. Heat 2 tablespoons of the oil in a deep, heavy-based, flameproof,
lidded casserole over a high heat. Add the beef, in batches if
necessary, and fry for 4-5 minutes, or until browned all over. Remove
the meat from the casserole using a slotted spoon and set aside.
2. Heat the remaining oil in the pan, add the onions and garlic and fry,
stirring well, for 4-5 minutes, or until softened, scraping up any
browned bits from the bottom of the casserole using a wooden
spoon. Stir in the beef stock.
3. In a large bowl, whisk the flour with a little of the wine until smooth,
then gradually pour in the remaining wine, whisking until combined to
a smooth batter with the consistency of double cream.
4. Return the browned beef to the casserole, then pour over the wine
and flour mixture. Bring to the boil, stirring until thickened, then add
the Worcestershire sauce and sugar and season, to taste, with salt
and freshly ground black pepper. Cover the casserole with the lid,
reduce the heat until the mixture is simmering, and simmer very
gently for 2 hours, stirring from time to time (alternatively, cook the
casserole in a low oven).
5. After 2 hours, add the mushrooms, return the mixture to the boil, then
cover again, reduce the heat until the mixture is simmering, and
simmer for a further ½ hour, or until the meat is tender.
6. Mix the mustard, horseradish and double cream (if using) in a bowl
until well combined. Just before serving, stir it into the casserole.

Французский пирог с яблоками.

Пирог с яблоками.
Gâteau invisible aux pommes.
Новый пирог с яблоками из французской кулинарии.
За что он мне понравился?
Вкус яблок не омрачненный обилием теста, которое лишь обволакивает тонко нарезанные дольки яблок.
Для пробы я воспользовалась рецептом для ramekin/Горшочек порционный, то есть для меньшего объема и испекла его в керамической форме размером 15x15см.
Итак, рецепт пирога с яблоками "Невидимый" (я бы назвала "с сюрпризом" или "с секретом").

на 6 маленьких ramekins:

- 3 яблока (300г нарезанных) - у меня было 2 больших Golden Delicious.
- 1 яйцо
- 50 г молока
- 35 г муки
- 25 г сахара (я взяла коричневый)
- 5,5 г пекарского порошка (Baking powder)
- 1/2 ст.л. ванильного экстракта
- 1 мини щепотка соли

Сухие ингредиенты по рецепту просеиваются в одну миску, а все жидкие ингредиенты – смешиваются в другой. Затем жидкие ингредиенты перемешиваются с сухими.
После этого я нарезала тонко на кухонном комбайне яблоки - очищенные и с удаленной серцевиной.
И затем практически каждую дольку отправляла в готовое тесто, то есть обволакивая каждую дольку тестом.
Вылить смесь в смазанную маслом или выложенную бумагой форму (моя - 15x15 см, в рецепте - блюдо из жаростойкого стекла 20 х 20 см) и выпекать в предварительно разогретой до 200С духовке около 30-35 минут - до золотистого цвета. (я выпекала при 180С - 45 минут)
Готовый пирог оставила в форме до утра. (возможно лучше оставить на решетке - нужно проверить)
Утром получила удовольствие. ("Утром — деньги, вечером — стулья"…только у меня вечером деньги - утром стулья)
Именно таким должен быть лучший яблочный пирог!
Здесь оригинальный (на фр.) мини - пирог с заливкой сверху, которой я пренебрегла.
А можно покрыть пирог
Пряной крошкой:
Смешать руками
- 25 г миндаля
- 25 г муки
- 25 г мягкого сливочного масла кубиками
- 25 г сахара
- 1/4 чайной ложки специи (Allspice)*
- 1 щепотка корицы
- 1 мини щепотка соли

*Состав (Allspice):
-1/2 Чайной ложки корицы
-1/2 Чайной ложки гвоздики
-1/2 Чайной ложки мускатного ореха
Смешать:
ИЛИ
Если вы предпочитаете меньшее количество гвоздики и мускатного ореха, ТО
- 1/2 чайной ложки корицы,
- 1/4 чайной ложки гвоздики,
- 1/4 чайной ложки мускатного ореха.

Покрыть пирог пряной крошкой и выпекать при 200 ° С в течение 30 минут.
Дать полностью остыть при комнатной температуре, хранить в холодильнике несколько часов (желательно на ночь) перед подачей на стол.

“Allspice” - это английский вариант.
А французский звучит несколько иначе!

Как Четыре специи" и "пять специй" - это смеси специй, которые вы можете купить готовыми или вы так же можете приготовить дома в соответствии своим вкусам.

"Четыре специи" - это смесь которая традиционно состоит из следующих ингредиентов:
- Перец
- мускатный орех
- Гвоздика
- Корица
Порой смесь также содержит имбирь или даже чили.

"5 специй" смесь состоит из этих ингридиентов:
- Перец
- Звезда анис
- Корица
- Гвоздика
- Фенхель
Кроме того, может содержать кардамон и имбирь.

"Состав этих смесей не является фиксированным, он варьируется в зависимости от региона и местных традиций, сохраняя при этом общую базу и специфический вкус."

Laurent’s Slow-Roasted Spiced Pineapple.

"Laurent Tavernier isn’t even my hair stylist, but he knows that I love food, and so whenever I’m in the salon for a cut, he takes time to chat with me about what he’s made over the weekend. When he gave me this recipe, I didn’t wait for the weekend to try it.
The dessert is simple enough: a slow-roasted ripe pineapple with a thick aromatic sauce.
As it roasts, it’s basted with orange juice, booze, jelly and a mix of spices until it is fork-tender and almost confited, or candied.
How much juice? “Oh, about this much,” Laurent said, making finger measurements that wavered. How much booze? “About the same amount.” And what kind? “Whatever you’ve got.” And the jelly? “Oh, you know, apple or quince or apricot or, no matter.” (Two tries later, Laurent told me that I should use a whole jar of jelly.) And the spices? “Again, whatever you’ve got—even a hot pepper!”

I’ve given you a real recipe (kind of ), but my inclination is to tell you to take a leaf from Laurent’s book and let inspiration and whatever you’ve got in the cupboard guide you.
Having made this so many times with so many combinations, I can now say with confidence what Laurent told me when he first described the dish, “You’ll love it.”

A word on size and servings: In Paris, I make these with the small pineapples known as Victorias.
They’re squat and compact and one fruit serves two to four, depending on what else is on the dinner menu and who’s around the table.
In the United States, where pineapples are much larger, I figure one for six to eight people, usually eight.
If you’d like, you can roast two pineapples at a time—the syrup multiplies easily.

1 ripe pineapple
½ cup (120 ml) freshly squeezed orange juice (from about 2 oranges)
½ cup (120 ml) Cognac, brandy, Scotch, Grand Marnier, bourbon, rum or other liquor (or an equal amount of orange juice)
1 jar (about 12 ounces; 340 grams) apple or quince jelly, apricot jam or orange marmalade
1 moist, fragrant vanilla bean, split lengthwise (optional)
Whole spices, lightly bruised, such as a few each of star anise, cardamom, coriander, pink peppercorns, allspice or cloves (no more than 3); fresh ginger slices; a cinnamon stick (broken); a small hot pepper (just 1 or a piece of 1); and/or black peppercorns (just a few)

Center a rack in the oven and preheat the oven to 150C.

Cut the top and bottom off the pineapple. Stand it upright and, using a sturdy knife, peel it by cutting between the fruit and the skin, following the contours of the pineapple. With the tip of a paring knife, remove the “eyes” (the tough dark spots). Cutting from top to bottom, quarter the pineapple and then cut away the core. Place the pineapple in a baking dish or small roasting pan that holds it snugly while still leaving you enough room to turn and baste the fruit.

Whisk the juice, liquor and jelly, jam, or marmalade together. Don’t worry about fully incorporating the jelly—it will melt in the oven—you just want to break it up. Pour the mixture over the pineapple, toss in the vanilla bean, if you’re using it, and scatter over the spices. Bake the pineapple for about 2 hours, basting and turning it in the syrup every 20 minutes or so, until it is tender enough to be pierced easily with the tip of a knife. The fruit should have absorbed enough of the syrup to seem candied. Allow the pineapple to cool until it is comfortably warm or reaches room temperature. Laurent strains the syrup and discards the spices, making the dish more elegant, but I leave them in because I love the way they look speckling the sauce; if you’re going to strain the syrup, do it while it’s hot — it’s easier.

The temperature you serve this at is, like so much of this recipe, up to you—warm or room temperature is best, but chilled is also good."

Маринованный лук.

Луковицы нужно располовинить повдоль и нарезать тонкими полукольцами.
Выжать сок из лимона. Две трети сока добавить к луку и осторожно перемешать (не солить).
Лук уложить под небольшой пресс и поставить в холодильник.
Минимальное время маринования 1-2 часа, но я обычно оставляю на ночь.

На следующий день я несколько раз промываю лук в холодной воде.
С полуколец возможно будет сходить тонкая пленочка.
Эти пленочки захватываются пальцами в воде и выбрасываются.

Сам лук станет ощутимо прозрачным, но своей упругости не потеряет.
Мне кажется, что он становится даже более хрустящим и упругим.


Затем я смешиваю лук с мелко-порубленой петрушкой, добавляю соленых каперсов и сбрызгиваю остатками лимонного сока.
Запах и вкус сырого лука почти пропадает, а ему на смену приходит что-то новое, очень пряное с легкими можжевеловыми оттенками.

Clementine Dressing with Wasabi and Ginger | recipe from FatFree Vegan Kitchen:
Sauces for salads are often called "dressings".
Ingredients
1/2 cup orange juice, fresh squeezed
2 clementines, satsumas, or other small seedless oranges, peeled
5 tablespoons white wine vinegar
1 medjool date, pitted and chopped
1 tablespoon chia or ground flax seeds
1 teaspoon ginger-root, minced (about 1/2-inch section roughly chopped)
1/2 teaspoon low-sodium tamari or soy sauce or salt to taste (optional)
1/2 to 1 teaspoon wasabi powder
1 pinch cayenne pepper
a few drops toasted sesame oil (optional, but good)
Instructions
Place all ingredients in blender and blend at high speed until smooth.
Taste and add additional seasonings as needed.
Allow to stand at least 10 minutes to thicken slightly and let the flavor develop.

Small Batch Clementine Marmalade.

Ingredients
- 6 clementines
- 2 lemons
- 2 cups water
- 3 cups dixie crystals extra fine granulated sugar

1. remove peels from clementines and lemons. thinly slice half of the peels (discard remaining half).
2. place slices in a medium pan with water and bring to a boil. reduce heat, cover, and simmer 20 minutes.
3. while slices are simmering, remove seeds and rinds from clementine and lemons. transfer to a food processor and pulse until desired consistency.
4. add pulp to saucepan. return to a boil. reduce heat, cover, and simmer for approximately 15 minutes. add sugar. mix to combine. return to boil, and boil rapidly, uncovered, until mixture thickens, stirring frequently.
5. remove from heat and carefully ladle into jars.
6. seal. allow to come to room temperature and transfer to refrigerator.

Овсяное печенье с тыквенным пюре | Готовим вместе с Нямой:
1 стакан цельнозерновой или пшеничной муки
1,5 стакана овсяных хлопьев
60 г сл. масла
1 ст.л. сметаны или натурального йогурта
0,5 стакана тыквенного пюре
1 маленькое яйцо
3/4 стакана сахара 0,5 ч.л. соды
1 ч.л. молотой корицы
0,5 ч.л. молотого имбиря
1/4 ч.л. молотой гвоздики щепотка соли
0,5 стакана сушеной клюквы
Духовку разогреваем до 180°C.

Смешиваем муку, соду, специи, соль и овсяные хлопья.
В чаше комбайна взбиваем добела сливочное масло, по-немного добавляя сахар.
Добавляем сметану, взбиваем, добавляем яйцо и взбиваем до однородности.
Вводим тыквенное пюре, взбивая на низкой скорости.
Всыпаем в блендер овсяную смесь и тщательно перемешиваем, после чего лопаткой вмешиваем клюкву, дабы её не повредить.
Выкладываем на бумагу для выпечки по 1 ст.л. теста, не очень близко друг к другу и выпекаем 12-15 минут.
У меня получилось 2 противня.

Из льняного семени.

Кисель из льняного семени:

Ингредиенты:
• 100 гр клюквы,
• 3 больших яблока (или груши),
• 100 гр семян льна,
• 1/2 лимона,
• мед по вкусу.
1. С вечера заливаем семена льна стаканом воды и оставляем настаиваться до утра.
2. Утром режем яблоки (груши), удаляем сердцевину, очищаем от кожицы, если она слишком грубая и режем на кусочки.
3. Моем клюкву и удаляем плодоножки.
4. Помещаем в блендер яблоки, клюкву и семена льна (оставшуюся воду не сливать). Взбиваем все на медленной скорости.
5. Выжимаем сок из половины лимона и добавляем в блендер. Взбиваем все еще раз на большой скорости. У вас должна получиться консистенция киселя.
6. Выкладываем кисель из льняного семени в чашки или пиалы, добавляем по щепотке ванильного сахара или корицы. Можно украсить веточкой мяты.
Кушать такой вкусный и ароматный кисель из льняного семени можно на завтрак или заменить им ужин. Клетчатка, содержащаяся в льняном семени разбухнет и даст чувство насыщения надолго. Поступая так в течение 10 дней, вы получите ощутимый эффект похудения и оздоровления организма. Затем делаем перерыв на 10 дней и повторяем курс лечения льняным семенем. Если у вас большой избыточный вес, то придется пройти 3-5 таких курсов.
Но "Живи легко!" предупреждает: льняное семя для похудения и очищения организма можно использовать только в свежеприготовленном виде, поэтому каждый вечер заливаем льняное семя водой и с утра готовим кисель для похудения и оздоровления организма столько сколько нужно на один прием! Готовить льняной кисель впрок и оставлять его в холодильнике нельзя!
Каша из льняного семени:

Ингредиенты:
• 2 ст.ложки льняного семени
• 1/2 стакана овсяных хлопьев,
• 1/2 стакана молока (лучше 1,5% жирности),
• мед и фрукты по вкусу
Приготовление:
1. Сначала в кофемолке или в блендере измельчим льняное семя.
2. В кастрюле кипятим полтора стакана воды, всыпаем овсяные хлопья и снова доводим до кипения.
3. Снимаем кастрюлю с огня и постоянно мешая кашу, добавляем льняное перемолотое семя и молоко.
4. Теперь, разложив по чашкам фрукты, выкладываем прямо на них нашу кашу с льняным семенем.
5. В конце можно добавить по вкусу мед в каждую. чашку.

Tabbouleh Salad.

Tartelette: Weekend Suppers With Friends: Fresh Market Tabbouleh Salad, Seared Lamb Chops With Olive Chimichurri & A Warm Mushroom Salad:
Market Fresh Tabbouleh Salad:
Serves 6

Ingredients:
1 1/2 cup large pearl couscous
3 cups water
1 teaspon olive oil
2-3 heirloom tomatoes, thinly slices
1 persimon, thinly sliced
4-5 radishes, thinly sliced
1/2 cup pitted kalamata olives
1 Persian cucumber, thinly sliced
micro basil or micro greens to garnish

Bring the water to boil in a medium saucepan with the oil and a touch of salt. Add in the couscous and cook for 8 to 10 minutes over a low boil. Remove from the heat, drain and rinse under cold water. Add the tabbouleh to a large bowl and gently add in the remaining ingredients (minus the garnishes). Drizzle with the vinaigrette (recipe below), garnish if desired and serve.

Vinaigrette:
1/4 cup freshly squeezed lemon juice
1 garlic clove grated (use a microplane) or minced
1 tablespoon red wine vinegar
salt and pepper to taste
1 small handful fresh parsley
1/4 cup olive oil In a food processor, whisk together the lemon juice, garlic clove, vinegar and salt and pepper and parsley. Slowly whisk in the olive oil until creamy. Toss with the salad.

Felicity's perfect coleslaw.
Sometime in the last decade, coleslaw, so familiar a fixture of every Boxing Day buffet and summer picnic, has been rebranded. And every time I see a "slaw" sitting chirpily on the menu, a grumpy, Victor Meldrew-like surge of irritation courses through me. The Berni Inn salad bar never called it slaw. My dad never put ham and slaw sandwiches in our picnics. If it doesn't have cabbage in it then it's not coleslaw: it's a salad. End of rant.
Making myself even more comfortable in pedants' corner, coleslaw is a corruption of the Dutch koolsla, meaning cabbage salad, and arrived here via the USA. Cabbage was, according to the Oxford Encylopedia of Food and Drink in America, a popular crop "throughout the colonies", and Dutch settlers, who grew it "extensively along the Hudson River" liked to serve it in the familiar, old-country way: the first mention of coleslaw in the USA dates from 1785.
Early versions seem only to have used a vinaigrette, but mayonnaise now seems to be the standard dressing, in Britain at least – preferably the gloopy sugary kind that smothers all other flavours, leaving you unsure whether you're eating cabbage or carrot. The occasional chunks of raw onion, however, usually make themselves known. Perhaps, thinking about it, this explains the rebranding exercise. But I'm determined to make coleslaw cool again. Or, at least, nice.

Apple Pancakes.

Pots and Frills: apples:
Apple Pancakes
(Makes about small 16 pancakes)

Ingredients:
1 cup flour,
1 egg,
1 1/2 cup yogurt, kefir, or sour milk,
pinch of salt,
1 medium apple Granny Smith or McIntosh,
vegetable oil for frying,
powdered sugar,
cinnamon, optional.

Preparation:
1. Put flour, baking powder, egg, yogurt, and salt into a bowl and mix well with a whisker until you obtain a smooth batter.
2. Peel off the apple and grate it on a large whole grater or cut into small thin slices. Incorporate them into the batter with a spatula.
3. Heat a large pan and cover the bottom evenly with oil.
4. When oil becomes hot, put dollops of batter and fry them for about 2-3 minute until they become gold."

6 cups white,tiny shredded cabbage( about half a medium head),
2 medium carrots, cut julienne or on a large whole grater,

Spiced Squash.

Serves 2
There is no oil in this recipe. The squash is so soft and satisfying that nothing more is required for richness.
Ingredients:
-1 pound peeled and cubed Gold Nugget squash (or butternut, or pumpkin)
-1 cup water
-2 ounces brown sugar
-1 fresh lime leaf (or 1 dried Persian lime, or a piece of lime zest 2 inches long)
-1 tablespoon lime juice 
-Large pinch ground cumin (less than 1/4 teaspoon)
-1/4 teaspoon ground sumac
-Salt
-Pepper
In a saucepan that can accommodate the squash in a single layer, bring the squash, sugar, and water to a boil, with the lime or lemon leaf. Lower the heat and continue cooking very sedately for from 20 to 30 minutes, or until the water has almost evaporated. Shake the pan gently every now and then to prevent the squash from sticking to the bottom. 
When the liquid starts to turn syrupy, add the lime juice, the large pinch of cumin, and the sumac. Shake the pan gently again and tilt to spoon the juices over the squash pieces. Season with salt and pepper, and taste. Cook some more until all the liquid disappears, taking care not to scorch. 
Transfer the squash to a serving dish (use a spatula, so the squash is not...squashed— it is very soft). Eat at once.

Tuckshop Gardener: Apples? Make mincemeat of 'em.:
- 250g of dried fruit (prunes, currants, sultanas, raisins, mixed peel or whatever  you fancy in the mix)
- 125g veggie suet
- 125g whole almonds, chopped
- 1 very large apple, peeled and grated.
- 60g dark brown sugar
- juice and rind of 2 lemons
- juice and rind of an orange
- 2 teaspoons of mixed spices (I used lots of cinnamon and ginger, with a bit of nutmeg)
- 60ml brandy

I put it all into jars which I'd sterilised with boiling water. They are now safely stored in a cool dark place and will be ready for eating in a couple of weeks. Easy peasy - and one less apple in the store….

Eating the shucked beans
Scarlett Runner beans are usually eaten as fresh green ‘string’ beans in the pod. However, if you have a surplus of dried beans, they can be cooked and served in meals. These beans cannot be eaten raw.

To prepare the shucked beans for eating, first soak the dried beans in cold water for 12 hours.
They are then cooked for approximately 2 hours, or until tender.
Beans harvested in autumn do not need be soaked and are soft and cooked in about 30 minutes. When using scarlet runner beans in salads, be sure to add some salt to the cooking water.
Stewed Runner Beans with Tomatoes
2 tablespoons olive oil
½ pound onions, cut into wedges
½ cup diced red peppers, sweet or mildly hot
4 garlic cloves, crushed
1 quart canned tomatoes, with their juice
3 fennel seeds
2 pinches ground saffron
½ cup chopped parsley
Ground black pepper

12 ounces (about 2 cups) dried Scarlet Runner Beans, boiled until tender with a sprig of sage and a garlic clove
Salt

In a large skillet, sauté the onions.
Add the peppers and garlic, and sauté until the garlic releases its fragrance.
Add the tomatoes, fennel, saffron, and parsley, and twist the pepper mill over the pan two or three times.
Break up the tomatoes with a spoon or spatula.
When the mixture is hot, add the beans. Boil the mixture about 10 minutes, until it’s suitably thick.
Add salt to taste, and serve with bread or rice.

Runner bean chutney.

Nigel Slater's runner bean chutney and simple pear tart recipes | Life and style | The Observer:
Makes one large and one smaller Kilner jar 

onions 2 medium
malt vinegar 150ml
allspice berries 8
coriander seed 1 tsp
yellow mustard seed 1 tsp
runner beans 750g
English mustard powder 1 tbsp
grain mustard 2 tsp
turmeric 2 tsp
cider vinegar 150ml
granulated sugar 200g
salt 1 heaped tsp
tomatoes 250g
cornflour 28g

Peel and finely chop the onions, put them into a medium-sized saucepan with the malt vinegar, allspice, coriander and mustard seeds. 
Bring to the boil then lower the heat and simmer for 10 minutes.
String the beans, removing the stalks. 
Thinly slice each bean, cutting diagonally to give fine shreds about 4 or 5cm long. 
Bring a pan of water to the boil, add the beans and cook for a full minute. 
Drain and set aside.
Mix the mustards, turmeric, sugar, salt and half the cider vinegar in a small basin. 
Dice the tomatoes then add to the vinegar and onions, stir in the beans and mustard mixture then add the remaining cider vinegar. 
Bring to the boil, then simmer for 15 minutes, stirring regularly. The beans should be tender, but still bright in colour.

Remove 2 or 3 tbsp of liquid and use it to mix the cornflour to a paste. 
Stir gently back into the beans. 
Leave to simmer for a minute or two until the mixture has thickened slightly. Ladle into warm, sterilised preserving jars and seal.

Йотам Оттоленги и Семи Тамими впервые встретились в конце 90-х годов в Лондоне, где открыли собственный ресторан и выпустили несколько совместных кулинарных книг.
Наиболее знаменитая их совместная работа, "Иерусалим", - это своего рода путешествие к истокам, изучение живой и разнообразной кухни их родного города.
Оба шеф-повара с удовольствием готовят дома, где и придумывают большинство своих самых вкусных блюд, используя обычные продукты их супермаркета.
Для Йотама очень важно, чтобы рецепты из его книг были доступны людям, готовящим еду в домашних условиях. И вот несколько советов, которыми он, вместе со своим коллегой Семи Тамими, делится с нами.

3. По поводу овощей. Йотам крайне редко варит овощи и рекомендует не передерживать их на огне. Он предпочитает запекать овощи или готовить их на гриле, поскольку такой способ сохраняет их ароматы. Он также любит по возможности готовить овощи целиком. А, если надо их нарезать, то лучше придерживаться их природной формы.

4. Ножи и простота. У вас должен быть один хороший нож. Вернее, один большой и один маленький. Больше не надо, настаивает Семи Тамими. Двух хороших ножей и, к примеру, мельницы для специй будет достаточно. Простота очень важна.

5. Шинкуйте, измельчайте, нарезайте колечками, кубиками и соломкой. И Семи, и Йотам утверждают: крайне важно понимать и следовать подготовительным инструкциям в рецептах. Они важны, и обычно есть причина, по которой продукт нужно нарезать кубиками, а не соломкой, нашинковать, а не измельчить. Ингредиенты должны быть определенного размера для того, чтобы рецепт сработал. "Мы очень внимательны к деталям в наших книгах, - говорит Йотам. - Если вы будете выполнять инструкции максимально точно, все получится". И, напоследок, небольшое напутствие от мастеров: всегда пробуйте еду в процессе приготовления и не забывайте, что готовка должна приносить радость! Наслаждайтесь процессом!

Mангольд. Суп.

Суп из красный чечевицы и мангольда.
2 столовые ложки красной чечевицы поставить вариться в
800 мл холодной воды - довести до кипения и варить на медленном огне в течение 35 минут до мягкости чечевицы.
Чечевица и даст густоту вашему супу.
Тем временем -
1 красную луковицу поджарить в
2-х столовых ложках оливкового масла - 4-5 минут
затем добавить
- порезанные листья и стебли мангольда - 100г
- порезанные листья кориандра (кинзу) - 50г (люблю!)
- 3 зубчика чеснока, раздавленные (люблю!)
и к ним
- три колечка острого перца - отрезать от целого
- соль.
Слегка обжарив все вместе, отправить в суповой блендер, добавить 100 мл горячей воды, измельчить, вылить в бульон с готовой чечевицей.
Дать закипеть на медленном огне.
Все! Суп готов!
Заправить зеленью.
Суп очень хорош! Очень!
Легкий, вместе с тем острый и полный аромата.
Достойный осенний супчик.
Red lentil and chard soup:
Это рецепт от Йотам-а Оттоленги.
Я его изменила с учетом отзывов к рецепту - упростила немного процедуру компонования супа, он отправил в блендер лишь половину ингридиентов.
И я сделала его острее.
Он так же предлагает добавить в поджарку тмин с корицей, я больше люблю укроп и кинзу.
И закончить суп хорошо вот так:
Раздавить семена кориандра и чеснок. Растопить масло в маленькой кастрюле на среднем огне, добавьте чеснок и семена кориандра, поджарить в течение 2 минут. Отправить смесь в суп, снять кастрюлю с плиты и накрыть крышкой. Оставьте суп настаиваться в течение 5 минут перед подачей на стол.
Подавать украсив тертой лимонной цедрой и листьями кориандра. Отожмите сок лимона в суп.

Elderberry apple pancake.

"The pancakes can be made in advance. Wrapped in clingfilm on a plate, they will keep for a couple of hours. The filling will keep for several days in the fridge. I made twice the recipe and ate it all week for breakfast.
Serves 6.

30g butter
100g flour
1 level tbsp caster sugar
1 large egg
an extra egg yolk
350ml milk
extra melted butter for cooking

For the filling
I kg sharp apples
80g caster sugar
4 heaped tbsp elderberries

For the top
50g white bread
2 tbsp golden caster sugar
50g butter

Make the pancakes Melt the butter in a small pan, remove from the heat and leave it to cool. Sift the flour, along with a pinch of salt, in a large bowl. Mix in the sugar, make a well in the centre and add the egg, egg yolk and cooled butter. Stir, drawing in the flour and gradually adding the milk to give a smooth batter. Leave to rest for half an hour.

Brush a 20-22cm non-stick frying pan or crêpe pan with melted butter, or wipe it over with buttered kitchen roll. When the butter starts to sizzle, stir the batter then pour in a wafer-thin layer, tipping the pan round so it just covers the base very thinly (a small ladle full should be enough for each pancake). Cook for a minute or so until the underside is golden. Loosen the pancake all the way round with a palette knife, then turn to cook the other side.

For the filling Peel the apples, core and chop into small pieces. Simmer in a heavy-based pan with the sugar over a low to moderate heat, stirring occasionally, until the apples have collapsed. Stir in the elderberries and leave to cook, with the occasional stir, for a minute or two, until the mixture is soft and fluffy. Try not to stir too much, otherwise you will crush the elderberries.

For the topping Set the oven at 180C/gas mark 4. Make the bread into coarse crumbs in a food processor or with a grater. Melt the butter in a shallow pan, then add the crumbs. When they are pale gold, add the sugar and allow it to caramelise slightly. As the crumbs become slightly glossy and there is a faint smell of toffee tip them into a bowl.

Place a pancake on the work surface, spread generously with the filling then roll up or fold into a triangle. Place in a shallow baking dish. Scatter the toasted crumb mixture on top and warm for 15 minutes in the oven."

Make some herb-flavoured jellies.

Gardening calendar: sow winter herbs and make apple jelly - Telegraph:
For four 450g jars you want 4½lb (2kg) apples (unpeeled), a large bunch of herbs (chopped fresh mint is ideal), 6fl oz (175ml) white wine vinegar and about 675g (24oz) granulated sugar
Roughly chop apples and place in a large stainless-steel pan with water to cover. 
Add mint and bring to boil. 
Pour in vinegar and cook until apples are soft (about 30 minutes). 
Pour mixture into a jelly bag or muslin and leave overnight. 
Measure juice and for every 20fl oz (570ml), add 16oz (450g) of sugar. 
Boil vigorously for about 15 minutes, take pan off the heat and test for setting.

Allow to cool for 10 mins then pour into sterilised jars.

- муку просеять в миску, соединить с дрожжами, развести молоком комнатной температуры, поставить в теплое место до увеличения в объеме вдвое.
- желток растереть с солью, сахаром и слив маслом.
- белок взбить миксером
- добавить в подошедшее тесто желток
- перед выпечкой осторожно ввести в тесто взбитый белок.
Это толстенькие пузырчатые блинчики.

Дрожжевые блины по ГОСТу.

Блины дрожжевые по ГОСТу - круглые блины, дырчатые, должны быть достаточно толстые - около 3 мм в толщину. Легко переворачиваются, не рвутся.

Мука — 330 г
Яйцо (50 г) — 1 шт
Сахар — 20 г
Масло сливочное — 25 г
Молоко — 550 г
Дрожжи (сухие) — 7 г
Соль — 7 г


- Первым делом нужно подготовить дрожжи. Молоко слегка подогреть, отлить 100 г и растворить в нем дрожжи, отставить минут на 10. (Если вы хотите воспользоваться свежими дрожжами, то вам нужно 20 г.)
- В оставшемся молоке (450 г) растворить соль и сахар, ввести молоко с дрожжами, размешать.
- Вбить яйцо и всыпать просеянную муку, размешать.
- Растопить масло и тоже влить в тесто, размешать. Я пользовалась венчиком, но вы смело можете использовать миксер. Получается гладкое тесто, консистенция - жидкая сметана.
- Поставить в теплое место на 3-4 часа, за этого время тесто нужно пару раз перемешать, "обмять". Тесто сильно увеличивается в размерах, поэтому его нужно готовить в глубокой миске.
У кого-то тесто поднимается намного быстрее (все зависит от темп-ры в помещении), поэтому, в принципе, совсем не обязательно ждать так долго, можно начинать печь через 1,5-2 часа.
- Выпекать блины с двух сторон на разогретой сковороде с добавлением масла до золотистого цвета.

Apple Pie.

Cooking apple - 1.5 kg (three pounds), no less.
Butter 50g
3 eggs
3 tablespoons flour
a little bit of soda
Sugar: 1 cup + 3 tablespoons.

Those who have a strong smell, long stored (week of strength), and seem easy in the hand. They are full of juice and pectin, so only they can give the desired result.
In principle, you can use any Cooking apple.
Take a circular shape pab - the size of a normal frying pan, rub it with butter. Line the bottom of pan with parchment paper.
Sprinkle the bottom of the solid pieces of butter.
Sprinkle with sugar (1/2 cup).
Cut the apples into quarters, core your apples.
Do not remove the peel.
Then lay all the apples skin down in a circle, the first layer - lying beautifuly, the most dense.
Then a second layer, all the same - skin downwards. Sprinkle the other half cup of sugar.
Bake in a hot oven until you see that the apples, though retaining its shape, but cook through, settled down and become soft.
Maybe even the top slightly blackened - this is not allowed. I can not say what the temperature, all ovens are different.
How do you usually bake apples? - That such a temperature-170C.
Remove from the oven pan and set aside for 10 minutes.
Now, beat 3 eggs with 3 tablespoons of sugar until stiff peaks (for example, in a blender).
Add 3 tablespoons of flour mixed with baking soda (on the tip of a teaspoon). Or extinguish soda with lemon juice and add to the sugar mixture and eggs.
(If you want, you can take 5 eggs + 5 tablespoons sugar + 5 tablespoons flour. )
Pour the resulting mixture of apples. It is very small, so you have to pour a spoon, and you will have the impression that you have something confused. But you're doing it right.
Now return pan to the oven and bake for about 10 minutes (or more) at a temperature of 220-230 degrees to grab the dough has increased in volume and have colour on.
It turns primitive sponge, and that we should be. Readiness check with a toothpick.
Take out the pan and let the cake cool completely.
After that, cover the shape of a large bowl, turn it over and peeled off the paper from the cake.
Apples will be in jelly (pectin!) And seem perfectly amber.
Cake should be eaten cold.

Капуста.

Давайте жить вкусно! - Зайцы есть?:
Кочан капусты очищаем от верхних листьев и режем соломкой, не слишком мелко. Стараемся избегать толстых прожилок. Морковь натираем на крупной терке. Овощи складываем в глубокую посуду (таз). Добавляем семена укропа и начинаем мять руками, чтобы капуста дала сок и чуть-чуть уменьшилась в  объеме. После чего чистую банку обдаем кипятком, на дно укладываем дольки чеснока, лавровый лист, душистый перец горошком и гвоздику. Пряности и чеснок я тоже предварительно обдаю кипятком. Плотно частями укладываем в банку капусту. Берем две горсти капусты и утрамбовываем ее кулаком, потом снова две горсти и так далее, пока не наберется целая банка. Будет хорошо, если чуть-чуть капусты останется - позже напишу зачем. В кастрюлю наливаем один литр воды и добавляем все специи и пряности, необходимые для маринада. Доводим до кипения и кипятим 5 минут, после чего добавляем 1 столовую ложку уксусной эссенции, перемешиваем и снимаем с огня. Аккуратно, постепенно заливаем маринад в банку, Чуть-чуть ждем - капуста немного осядет, вот тут-то и добавляем оставшуюся капусту. Закрываем банку полиэтиленовой крышкой и оставляем стоять на столе. Когда банка остынет, можно ставить в холодильник. Капусту удобно готовить с вечера, после чего она проводит ночь в холодильнике, а утром превращается в прекрасный салат!

Итак, на 10 л. матбухи нам потребуется:

4 кг. – обесшкуренных помидор
4 кг. – обожженных, вычищенных и обесшкуренных перцев

2-3 ст.л. – кориандра
2-3 ст.л. – кумина

Stone-Fruit Compote.

Этот рецепт из Delia Smith’s Summer Collection.
Рецепт предусматривает:

3 персика
6 абрикосов
6 слив
225 г черники
175 г малины
- Сгодиться любая смесь фруктов, но нужно иметь ввиду, что смородина, например, перекроет по вкусу все остальное.

50 г сахара, плюс дополнительно, если считаете необходимым

Предварительно разогрейте духовку до 180C.
Нужно огнеупорное блюдо около 30 см в диаметре.
Метод
Удалить косточки. Разрезать половинки фруктов на три дольки. И хорошо, если можно разложить в один слой на дно огнеупорного блюда.
Засыпать сахаром.
Поместить блюдо в центр духовки и запекать (без покрытия) в течение 25-30 минут или пока они не станут мягкими.
Вынуть из духовки и осторожно перемешать с ягодами.
Проверить на сахар и добавить больше, если считаете нужным, охладить и разлитье по баночкам.
Хранить в холодильнике.
Подавать со сливками или творогом, йогуртом, мороженным. Whatever!

Zucchini Fritters

1 zucchini
125 g of maize flour
75 g of wheat flour
1 pinch of baking food
20g grated parmesan
2 eggs
125ml natural yoghurt
75 ml of milk
1 c. tablespoons olive oil
salt and pepper
vegetable oil

I like to make them using a combination of cornmeal and flour, but you could do them with wheat flour only (200 grams).

Cheesecake/чизкейк/сырник .


Ингредиенты для песочной основы чизкейка:

40 г (2 полоски) сливочного масла
150 г песочного печенья или сладких крекеров

Ингредиенты чизкейка:

800 г сливочного сыра или сыра Филадельфия
4 яйца
5-6 ст. ложек лимонного сока
лимонная цедра (одного лимона)
1 стакан сахара

Способ приготовления:

- разогреть духовку - 180C
- приготовить форму для выпечки (моя - 22x22 см), покрыть форму пищевой бумагой (оставить пару см торчащими за края формы)
- измельчить (покрошить) печенье
- растопить сливочное масло и добавить в измельченное печенье
- выложить печенье в форму и распределить равномерно по дну формы
- смешать сливочный сыр, яйца, лимонный сок, лимонную цедру и сахар до однородной кремообразной массы
- аккуратно вылить кремовую смесь в форму (поверх печенья)
- выпекать 30-35 минут (может понадобиться допольнительные 5-10 минут,если в центре кекс будет неплотным - проверить, если слегка потрясти форму из стороны в сторону.)
- достать чизкейк из духовки и дать ему остыть (не менее 3 часов)
- как только чизкейк охладиться, достать его взяв за края торчащей пищевой бумаги
- перед подачей, порезать квадратиками и посыпать сахарной пудрой (или лимонной цедрой, по желанию)

Этой порции нам хватает от души попить чай всем семейством. Получается чуть больше десяти блинов диаметром 28 см.

A summertime salad.

Diced zucchini and tomato salad with bulgur and sweet corn

1½ cups bulgur, brown rice, wheat berries, couscous, or quinoa
2 large, fresh tomatoes
2 small or 1 large zucchini
1 cup cooked sweet corn kernels
2 or 3 Tbsp. chopped fresh herbs (basil, mint, parsley, tarragon...)
1 clove of garlic
2 Tbsp. vinegar
2 Tbsp. vegetable oil
salt and pepper to taste
Cook the bulgur, brown rice, couscous, wheat berries (Ebly in France), or other grain.

Meanwhile, remove the seeds from the tomatoes and dice the tomato flesh finely. Cut the zucchini into fine dice. (Peel the vegetables if you want to.) If using fresh or frozen corn, steam the kernels for 3 or 4 minutes — corn from a tin can go in without cooking. Chop the fresh herbs and finely dice or puree the garlic clove.

When the cooked grain has cooled to room temperature, mix it with the diced tomato, zucchini, and corn. Season the mixture with salt, pepper, vinegar, and oil. Mix in the chopped herbs and serve the salad chilled or at room temperature.

Lemon juice could replace vinegar. Use the oil you prefer, or a combination. And the herbs...

Walt made the salad a couple of days ago using fresh mint, and I think it's really delicious with that flavor. We ate the bulgur salad with oven-roasted chicken wings that we marinated and basted with a combination of honey, lemon (zest and juice), and garlic.

Маринад для курицы.

Рецепт из книги Steven Raichlen "The Barbecue Bible"
Курица в пиве по-бразильски
на 4 куриных окорочка общим весом около 1 кг

250 мл пива (я брала светлое)
60 мл растительного масла
60 г дижонской острой горчицы
1/2 ст.л. порошка сладкой паприки
1/2 ч.л. свежесмолотого черного перца
1 небольшая луковица, порезанная полукольцами
6 зубчиков чеснока, мелко порезанных
2 лавровых листа

Окорочка разрезать каждый на 2 части.

Смешать пиво, масло, горчицу, паприку и перец в кастрюле достаточного размера, в которую могут поместиться окорочка . Добавить лук, чеснок, лавровый лист и курицу, хорошо все перемешать. Закрыть крышкой и поставить в холодильник на 1-2 суток, минимум - на 6 часов, но подольше лучше :-) Периодически перемешивать.

В день приготовления достать из холодильника, вынуть части курицы из маринада, хорошо протереть салфетками и посолить. Маринад процедить.

Готовить на открытых углях по 12-15 минут с каждой стороны, последние 10 минут смазывать маринадом со всех сторон. Очень сочная и вкусная курица получается.
Можно приготовить и в духовке.
Противень надо выстелить фольгой, уложить на нее куски курицы, еще раз смазать собравшимся на дне посуды маринадом, плотно закрыть фольгу в виде конверта и поставить в заранее нагретую да 180-190 градусов духовку.

Примерно через полчаса, когда почувствуете изумительный аромат, раскройте фольгу и продолжайте выпекать бледное мясо до выпаривания жидкости и образования корочки аппетитного золотисто-коричневого цвета.

Gooseberry Orange Jam. Gooseberry Jam With Carrot.

Gooseberry Orange Jam | From A Cabin Up North:
800 gr Gooseberries
Juice & Zest of 2 oranges
400 gr Sugar
Canning Jars
How to:
1. Wash the gooseberries, remove stems and crowns and heat.
Add the orange juice and zest and boil.
Add sugar. Stir with a wooden spoon.
Get it up to a rolling boil for about 20 minutes.
So...without water but little sugar stored in the refrigerator or eat immediately!

Red Gooseberry and Orange Jam
800 gr ripe red gooseberries
400 gr orange
170 gr raisins
400 gr sugar

Top and tail the gooseberries. Put them in a pot with the thinly pared and
finely shredded orange peel and the chopped pulp. Cook the fruit until
nearly tender; add the raisins and the sugar, and boil - not too fast - for
15 minutes or longer (or until the setting point is reached.) Pot and
seal while still hot.

This jam is nicest made with ripe red gooseberries, but yellow ones can be
used if they are not too ripe.

Gooseberry Jam With Carrot
500 grams of nice & crisp organic carrots, peeled & coarsely grated
500 grams of red gooseberries, topped & tailed
300 grams of sugar

Put grated carrots and cleaned gooseberries in a large saucepan and add a tiny drop of water (couple of spoonfuls will do). Bring slowly to the boil, releasing juices from carrots and gooseberries, and simmer on a low heat for 30 minutes. Stir regularly to avoid sticking.
Add sugar, simmer for another 15 minutes.
Let stand, covered, for 24 hours.* Bring to the boil again, simmer for 5-10 minutes and then pour into hot sterilised jars.
Keep in a cool place.

Yields 2-3 small jars.

* You can also pour the jam into jars straight away. I find the jam sets slightly better (thicker) when you let it stand and then reheat.

Strawberry and gooseberry jam.

Strawberry and gooseberry jam

Makes 5-6 x 340g jars
Ingredients
150-200g gooseberries, topped and tailed
1kg strawberries, hulled, large ones halved
750-1kg jam sugar with added pectin (the more sugar you use, the firmer the set of the jam)
15-20g unsalted butter (optional)

Directions
Put the gooseberries in a saucepan with 100ml water.
Place on a low heat and cook gently until the gooseberries are tender but still holding their shape.
This should take 6-7 minutes, depending on their size and maturity. Meanwhile, place the strawberries in a roomy, heavy-based pan or a preserving pan.
The fruit should be no more than a third of the way up the pan to allow for a rapid rise when a rolling boil is reached.
When the gooseberries are cooked, add to the strawberries. Put the preserving pan on a gentle heat and add the sugar.
Heat gently, stirring, until the sugar has fully dissolved. Then increase the heat and bring the pan to a full rolling boil (i.e. when the surface is covered with a mass of foamy bubbles). Boil for 8-9 minutes, without stirring too much, until setting point is reached.
To check for setting point, drop a little jam onto a cold saucer, allow to cool for a minute then push gently with your fingertip. If the jam crinkles, setting point has been reached.
Remove the jam from the heat and, if the surface is scummy, add a knob of butter and keep stirring until the scum has dissolved.
Pot into warm, sterilised jars and seal immediately.
Label when cold.
Unopened and stored in a cool, dry place, the jam will keep for up to a year. Once opened, keep in the fridge or a cool larder and use within a few weeks.

Alice’s Gooseberry Jam recipe is from the earliest collection of celebrity recipes I know; “Celebrated Actor Folks’ Cookeries: A Collection Of The Favorite Foods of Famous Players” from 1916.  Here it is:
Stew fruit in a kettle of water, press through coarse sieve, return to kettle and add three-quarters of a pound of sugar to each pound of fruit, after it is pulped.  Boil three-quarters of an hour and pour into jars and seal carefully.
