Stuffed Peaches.

Pesche ripiene.

Makes eight peach halves

Ingredients:
4 big yellow peaches
7 ounces Amaretti crunchy cookies
3.5 ounces sugar
1 egg yolk
Eight knobs (about 8 to 12 tablespoons) butter
Half glass white wine

Method:
- Wash the peaches then cut them in half and pit.
- Use a spoon to remove some pulp in the center of each peach and cook it in a saucepan over low heat with the sugar for about 15 minutes.
- In a bowl, crush the Amaretti cookies and mix with egg yolk. You can add a drop of sweet liquor, like Sassolino, if you'd like.
- Fill the peaches with the mixture and add a knob (about 1 to 1-1/2 tablespoons) butter and a dash of sugar to each one.
- Pour the wine into a tray, arrange the peaches on it, and cook at 340 degrees Fahrenheit for about 30 minutes.
- Enjoy warm or even cold. They're also delicious the day after.

Caramel Apple Jam.

"5 cups unsweetened applesauce (start with 3 1/2 pounds apples)
3 1/2 cups sugar
1/2 cup water
1 tablespoon lemon juice
1/2 vanilla bean, split lengthwise
1/2 teaspoon sea salt
3 tablespoons dark rum

1. If you don’t have applesauce on hand, make your sauce. Start by coring and slicing the apples (don’t peel ‘em) and cooking them over low heat until they’re soft. I usually add about 1/2 cup of water to the pot so they don’t stick or burn. Cover the pot while the apples are cooking; they should be ready in about 20 minutes. Put the cooked apples through a food mill (use the medium screen if you have a choice) and, voilà, sauce!

2. Prepare your jars and lids.

Broad Bean Salad.

Spring Fava Bean/broad beans Fennel Salad Recipe:
Vicia faba, also known as the broad bean, fava bean, faba bean, field bean, bell bean, English bean, horse bean, Windsor bean, pigeon bean and tic(k) bean.
INGREDIENTS
2-3 lbs fresh fava beans (also called broad beans), yielding about 1 1/2 to 2 cups shelled beans
Salt
1 small bulb fennel, thinly sliced (mandoline works well for this)
2 ounces Parmesan cheese, thinly sliced
10 fresh mint leaves, thinly sliced (chiffonade by stacking leaves and rolling them into a cigar shape, cut thin slices from the end)
2 scallions (green onions), sliced
Extra virgin olive oil

Strawberry Chipotle Jam

Tide and Thyme » Strawberry Chipotle Jam:
"6 cups strawberries

1 can Chipotle Chillies in Adobo Sauce (I used about 3/4 of a can)
6 1/2 cups granulated sugar
1/4 cup lemon juice
1 package powdered pectin

In a food processor or blender, process the chilis and berries in a food processor (pulse), being careful not to over process, you want some pieces of berry. Pour berry mixture, lemon juice, and pectin into a large pot.

Cook, over medium-high heat, stirring frequently until mixture comes to a boil. Add sugar, stirring until dissolved. Return to a rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. Skim foam if necessary.

Immediately pour the hot jam into hot jars and put the lids on. Process in a water bath for 10 minutes."

9 chipotle chile (dried, stemmed and slit lengthwise)
0.5 cup onion (cut into 0.5 inch slices)
5 tbsps cider vinegar
4 garlic cloves (sliced)
1/3 cup ketchup
1/4 tsp salt
1 tsp dark brown sugar
3 cups water

-Place all ingredients in a heavy bottom pan, cover, and cook over very low heat for 1 to 1-1/2 hours, until the chiles are very soft and the liquid has reduced down to 1 cup.
Alternate Method:
Place ingredients in a dutch oven and bake at 325 degrees for 1 1/2 hours till peppers are tender,and sauce is thick.

Toffee apples for grown-ups, the tarte tatin is all about the flavour of the fruit – crisp pastry, firm, juicy apples and that sweet, buttery caramel topping, holding the whole lot together. We may grow the best varieties, but the French really know what to do with them.

Serves 6

7 medium apples: 4 Cox, 3 Granny Smith
200g white sugar
50g butter
175g ready-made shortcrust pastry OR
225g plain flour
2 tbsp caster sugar
120g cold butter
1 medium egg, beaten

Basic Salad Dressing

Basic Salad Dressing:
"It's a simple soy sauce flavored salad dressing made with rice vinegar.
Ingredients:
2 Tbsp rice vinegar
1 Tbsp soy sauce
1/2 tsp sugar
5 Tbsp vegetable oil
Preparation:
Mix all the ingredients other than oil in a bowl.
Add oil gradually and mix well.
*Makes about 1/2 cup"
