Marinated strawberries with a hint of mint, served with clotted cream.

Ingredients
(Serves four)

400g strawberries, washed and cut into quarters
50g caster sugar
Lemon juice
Fresh mint, chopped finely
Pinch of ground white pepper
Clotted cream

Method

Take one-quarter of the strawberries, sprinkle with sugar and add a dash of lemon juice. Then, using a fork, mash well and add the remainder of the strawberries. Add a pinch of pepper, 1tsp of chopped mint and adjust the sweetness to your liking, then leave to marinate for 30 minutes in the fridge.

To serve, place the strawberries into bowls and spoon some clotted cream into the middle.

Poppa Wan's simple soy-glazed chicken.

Serves 4
3 tbsp groundnut oil
6 chicken thighs, on the bone, skin removed
2 cloves of garlic, peeled and finely sliced
a 2cm - ¾ in piece of fresh ginger, peeled and finely sliced
3 spring onions: 2 finely sliced into rounds, 1 sliced into long diagonal pieces
6 tbsp water
1 tbsp honey
5 tbsp light soy sauce
½ a fresh red chilli, finely sliced

To serve 4,

peel and finely chop 1 clove of garlic.
Peel and finely slice 2 spring onions and ½ a fresh red chilli.
Roughly peel 1 cucumber.
Slice off the ends, quarter the cucumber lengthways, then, using a teaspoon, scoop out the seeds and discard.
Slice the cucumber into long, angled strips about 0.5cm - ¼ in thick.
Put them in a bowl with the garlic, chilli and spring onions.

In a separate bowl mix together
- 3 tbsp rice vinegar,
- 1 tsp sesame oil,
- 1 tsp fish sauce,
- 1 tsp light soy sauce,
- 1 tsp caster sugar and a pinch of salt to form a dressing.
Pour this over the cucumber mixture and leave to sit for 2 minutes before serving.

Тесто:
1 фунт муки
0.5 фунта сливочного масла
1/4 фунта толченого сахара
3 желтка
1 рюмка воды
Масло чтобы было прямо с погребу, похолоднее.

К нему начинка
-1/4 фунта масла растереть, 2 яйца тереть с маслом;
-толченого сахару 0.5 фунта,
цедру с двух лимонов растереть на терке и сок с трех лимонов.
Кипятить до тех пор, пока будет густо как мёд."

Yotam Ottolenghi's shakshuka recipe
A north African dish. Some add preserved lemon, others feta, and the herbs and spices vary. Whatever you do, it's ideal for brunch

½ tsp cumin seeds
190ml light olive oil or vegetable oil
2 large onions, peeled and sliced
2 red and 2 yellow peppers, cored and cut into 2cm strips
4 tsp muscovado sugar
2 bayleaves
6 sprigs thyme, picked and chopped
2 tbsp flat-leaf parsley, chopped
1 bunch fresh coriander, chopped
6 ripe tomatoes, roughly chopped
½ tsp saffron strands
Pinch of cayenne pepper
Salt and pepper
Up to 250ml water
8 free-range eggs

4 стакана (200 гр-стакан) нарезанного ревеня
4 стакана пюре из клубники
1 стручок ванили (разрезать вдоль)
1,5 стакана сахара
