Tinned tomatoes.

Lidl (31p) The plum tomatoes had notably thick juices without bitterness and a natural sweet, herby quality. Enough solid tomato to half fill the tin, even after draining off the juice. Outstanding overall, preferable to many of the more expensive and even premium brands.
The winner 9/10
Chopped Thinner juices than the plum and less richly flavoured. 5/10
Sainsbury's Basics (31p) The plum tomatoes had a good half-tin full of tomatoes after draining. Juices are thin and a bit metallic-tasting. Tomatoes almost flavourless. 3/10
Chopped Uniquely, these come in a handy Tetra Pak. As for the contents, they had thin juices, but a more mellow flavour than the plum. 4/10
Morrisons Saver (31p) The plum tomatoes had a huge piece of skin on one tomato. Mild juices, and sharp-tasting fruit. 5/10
Chopped Mild and very average. 5/10
Waitrose Essential (55p) Thick juices with a good tomatoey flavour, but a little tinny bitterness. Less than half full of "flesh" but those juices are thick. Great stuff but at 55p a tin, hardly fair to compare to the economy at 31p. 9/10
Chopped Thinner juices and less rich flavour. 6/10
Tesco (31p) Bland, like the Sainsbury's one, though there seems to be more tomato in the can. Juices a tad thicker, but a tinny flavour. 4/10
Chopped Fairly thick juices (good) but a lot of bits of skin, and a thin, sharp flavour (bad). 6/10
Asda Smart Price (31p) Decently thick juices and really meaty tomatoes but a touch bland – no bitterness, though. 6/10
Chopped Rich and well balanced, but an odd fermented after taste. 4/10

Tomato and Red Pepper Soup.

Tomato and Red Pepper Soup – Easy Recipe (houseandgarden.co.uk)
Ingredients
A dash of extra virgin olive oil and fresh basil makes this simple tomato and red pepper soup recipe oh-so special.
Best of all, it takes just 10 minutes to prepare. An easy - and tasty - way to beat the chill.

2tbsp olive oil
1 onion, chopped
2 large red peppers, seeds removed and roughly chopped
2 cloves garlic, chopped
600g (21oz) ripe tomatoes, quartered
1 x 400g (14oz) tin chopped tomatoes
1l chicken stock or vegetable stock
1tbsp chopped fresh basil, to garnish
Extra virgin olive oil, to garnish
Directions
1. Heat the olive oil in a large saucepan.
Sauté the onion, peppers, and garlic for about 5 minutes.
Add the fresh tomatoes and cook for another 3-4 minutes.
2. Add the tinned tomatoes, the stock and 1 (250ml) cup of water.
Bring to the boil, reduce the heat and simmer for 30 minutes.
3. Remove from the heat and allow to cool a little.
Purée the soup in batches in a food processor or with a hand-held blender.
Strain through a coarse sieve and add a little extra stock, if desired.
4. Season to taste with salt and freshly ground black pepper.
Serve hot, and garnished with the basil and a drizzle of extra virgin olive oil.

top tips
Roasting the vegetables gives the soup a delicious flavour.
Simply halve the onions, tomatoes and peppers, place them on a lined baking tray.
Drizzle with a little olive oil and roast in a 200°C (gas mark 6) oven for 60 minutes, turning the onions and peppers once.
Next, peel the skin from the cooked peppers and tomatoes.
Add the vegetables to the stock and continue from step 2.

Lentil, tomato & spinach soup.

The Ingredient List:
1 tsp olive oil
1 white onion
2 cloves of garlic
2 sticks of celery
1 small bunch of fresh coriander
1 tsp turmeric
1 tsp ground cumin
80g spinach
2 medium (about 350g) sweet potatoes
6 large vine tomatoes, (about 300g), roughly chopped
100g red lentils
1 litre organic vegetable stock
4 tbsp natural or 0% Greek yoghurt
Wholemeal bread, to serve

Preparation Method:
Place a large pan on a medium heat, along with a little oil.
Peel the onion and garlic, then roughly chop with the celery and add to the pan.
Finely chop the coriander stalks and throw them in too, then cook for 8-10 minutes, or until soft and golden, then add the spices and keep cooking for a further couple of minutes, stirring until combined and smelling lovely.

Meanwhile, peel the potatoes and roughly chop them, as well as the tomatoes.
Add both to the pan, along with the lentils and vegetable stock.
Bring to the boil and then turn down to simmer for 25-30 mins, until the potatoes are soft and the soup has thickened (feel free to add more water if you feel it needs it).
Stir through the spinach if using, then season with salt and pepper.
Now you can blitz up the soup, keep it chunky, or take out a few ladlefuls and blitz that then add it back to the chunky mix to create a mix of textures.
Serve up into bowls with a dollop of natural or Greek yoghurt, top with the picked coriander leaves and serve with some toasted wholemeal bread.

Tomato Tarte Tatin
Ingredients:
2 tablespoons butter
1 tablespoon brown sugar
2¾ pounds 2-inch tomatoes (or Roma tomatoes), halved and seeded
1 tablespoon balsamic vinegar
1 tablespoon choppedfresh oregano
Salt and pepper, to taste
Pie pastry for a 12-inch tart
Extra sprigs fresh oregano (for garnish)

Preserve Small Tomatoes.

The brine was
-1/2 cup apple cider vinegar,
-1/2 cup filtered water,
-2 teaspoons pickling salt and
-2 teaspoons sugar.
I added
-tiny pinches (no more than an 1/8 of a teaspoon each) of mustard seeds,
-coriander seeds and
-red chili flakes to the jar, along with
-two juniper berries.
Pour the brine over the tomatoes.
Tap to remove bubbles and add a bit more brine.
Keep in the fridge for at least 48 hours before eating.

Tomato tarte tatin.

My Favourite Dish: Eric Lanlard on heirloom tomato tarte tatin - Telegraph:
"Serves eight
500g (1lb 2oz) ready-made or home-made puff pastry
2 tsp extra-virgin olive oil
Bunch of thyme, leaves picked
12 mixed heirloom tomatoes, halved
75g (2 ¾oz) gruyère, finely grated
2 tbsp wholegrain mustard
Bunch of basil

Tomato Jam

1.3kg ripe, super sweet cherry tomatoes
1 1/2 cups sugar
1/4 cup freshly squeezed lemon juice
3-tablespoon fresh grated ginger
1-tablespoon ground cumin
1/2-teaspoon ground cinnamon
1/4-teaspoon ground cloves
1-teaspoon salt
1/2-teaspoon cayenne, or to taste.
