Quick-fermented cucumbers.

Makes 1 x 3 litre jar
1kg fresh organic cucumbers, the smallest ones you can find
20g sea salt flakes
1 litre mineral water
1 red chilli, whole but bruised with the blade of a knife
10 garlic cloves
1 tsp raw honey
2 sprigs of leaf celery
10 peppercorns (pink are good too!)
1-2 dill umbrellas or some bruised dill stalks
Horseradish leaves, if available
Blackcurrant leaves, if available

Sweet cucumber pickle.

Seasonal local food recipe No 106: Sweet cucumber pickle @ Camel Community Supported Agriculture:
Ingredients for 5 small jars
3 large cucumbers
2 onions
50g salt
600ml white wine or distilled white vinegar
450g granulated sugar
1 tbsp mustard seeds
1 tbsp celery seeds
5 cloves
½ tsp ground turmeric

Lovage, lettuce, pea and cucumber soup.

Lovage, lettuce, pea and cucumber soup
A refreshing and pretty summer soup.
Serves four.

20g butter
1 onion, finely diced
1 tsp fresh thyme leaves, chopped
Salt and freshly ground black pepper
A few young lovage stalks, chopped
700ml chicken or vegetable stock
2 little gem lettuces, finely shredded
100g peas
½ cucumber, cut into 5mm dice
1 small handful lovage leaves, shredded
A few tablespoons of crème fraîche or thick yoghurt, to finish

Warm the butter in a large saucepan over a medium-low heat.
Add the onion, thyme and a pinch of salt, and sauté until the onion is soft and translucent, about 10 minutes.
Add the lovage stalks and sauté for a couple of minutes.
Pour in the stock and simmer for 10 minutes.
Add the rest of the veg (keep back some lovage leaves to garnish) and simmer for five minutes.
Season and serve with dollops of crème fraîche and a scattering of lovage leaves.

Spicy cucumber and spring onion salad.

Spicy cucumber and spring onion salad.
I love, love, love this.
To serve 4,

peel and finely chop 1 clove of garlic.
Peel and finely slice 2 spring onions and ½ a fresh red chilli.
Roughly peel 1 cucumber.
Slice off the ends, quarter the cucumber lengthways, then, using a teaspoon, scoop out the seeds and discard.
Slice the cucumber into long, angled strips about 0.5cm - ¼ in thick.
Put them in a bowl with the garlic, chilli and spring onions.

In a separate bowl mix together
- 3 tbsp rice vinegar,
- 1 tsp sesame oil,
- 1 tsp fish sauce,
- 1 tsp light soy sauce,
- 1 tsp caster sugar and a pinch of salt to form a dressing.
Pour this over the cucumber mixture and leave to sit for 2 minutes before serving.
