Pineapple Raspberry Jam.

Pineapple Raspberry Jam | Sweet As The Punch:
"Pineapple Raspberry Jam

Ingredients :
1 cup pineapple fresh or frozen, small cubes
1 cup raspberries fresh or frozen
1/2 cup granulated sugar or honey
1 tablespoon fresh lemon juice
1 tablespoon Kirsch optional
How:
Stir pineapple, raspberries, and sugar in a non-reactive saucepan over medium high heat.
Use a potato masher to mash/stir the fruit to achieve a jam consistency.
Bring mixture to a boil and boil hard for 1-2 minutes, stirring constantly.
Remove from heat and stir in lemon juice and Kirsch.
Cool to room temperature, then cover tightly and refridgerate. Jam will thicken as it cools.
Keep refrigerated, tightly covered, and use within one week."
